Cultured Butter

Our award winning cultured butter starts as crème fraîche. We take rich cream, add in a bespoke lactobacillus culture, and leave it to develop for over thirty hours until it has become beautifully thick and deep in flavour. The crème fraîche is then churned at our dairy on the Cholmondeley Estate. It is hand salted before being shaped. From the first cream to the final product, the whole process takes four days.

From Cream to Butter, the Slow Way

The rich cream is set with a bespoke lactobacillus culture chosen for the depth of flavour it builds. Over the next thirty hours and more, the cultures break down the lactose in the cream, building lactic acid and developing the aromatic compounds that give cultured butter its character. By the time it is ready to churn, the cream has turned into flavourful crème fraîche.

We traditionally batch churn the crème fraîche and let the butter come together at its own pace. Once the cultured buttermilk has been drawn off, the butter is washed, hand salted (or left unsalted), shaped, and wrapped. It takes four days, end to end.

Our cultured butter is available in three formats:

Slow-cultured Cheshire butter, salted or unsalted.
(custom-printed foils available).

For Bakeries and Hospitality

A lot of what we churn goes straight into professional kitchens. Our 1kg unsalted cultured butter plaques are made for pastry and Viennoiserie work, and are used by some of the leading bakeries and patisseries in the country.

We also produce 10g and 15g individual butter portions, salted or unsalted, that turn up on tables at hotels, restaurants, airlines, football clubs and private members’ clubs. The foils can be printed with custom designs for venues that want their butter to carry their own mark.
